Minimalist Granola

This is a recipe I always have on hand to perk up my breakfast or light dessert.

It’s only 2 food ingredients + some vanilla and spice!

Sweetness is kept to a minimum (barely there) so I can add in nuts or fruit as I please and the granola brings playful crunch and desserty essence.

How to prep minimalist granola

12 dried apricots . 1/2 cup boiling water . 1 tbsp vanilla extract. 1/2 tsp cinnamon . 1/8 tsp clove . 1/8 tsp nutmeg . 2 cups rolled oats

  1. Preheat the oven to 350F on the convection bake setting

  2. Soak dried apricots in boiled water for 5 minutes

  3. Use an immersion blender to blend into a paste

  4. Mix in the spices

  5. Mix the apricot paste into the dried oats and stir well until thoroughly combined (feel free to use your hands)

  6. Spread the oats over a large cookie sheet breaking up big pieces a bit

  7. Convect Bake at 350F for 15 minutes

  8. Stir; turn the oven down to 300F and bake another 15 minute

  9. Stir; lower the temperature to 200F. Bake for 15 final minutes.

  10. *let the granola stay in the hot oven until it is cool (overnight is fine); this dehydrates it to a tender crisp consistency.
