This is one of those staple recipes that makes healthy eating doable.
Everyone knows that salads are healthy; more than that, big servings of vegetable, like salad, at a meal make a world of difference in terms of automatic calorie and appetite control.
This is because the volume and chewing time communicates satisfaction to the brain, while our taste buds can be sufficiently tickled by naturally smaller amounts of the more exciting parts of the meal.
Having said that, vegetables are often not the star of the meal because most people find them boring.
I insist that vegetables should taste great!
In fact, I have a weekly salad rotation that my household looks forward to, sometimes more than the rest of the meal.
One of those salads is a simple romaine with this yogurt dressing (kind of a super healthy Caesar).
With tender-crisp lettuce coated in tangy creaminess with tasted almond crunch (see toasted almonds recipe), it’s a fast and tasty way to really bulk up a meal.
1 cup plain 2% yogurt. 1 Tbsp olive oil. 1 Tbsp dijon mustard. 1 tsp miso paste (or 1 Tbsp nutritional yeast + 1/8 tsp salt). 1 tsp dried dill (or 1 Tbsp fresh dill, finely minced). 1/4 tsp smoked paprika (optional but recommended). 1 small clove garlic, finely minced.
Mix all ingredients together with a spoon or spatula.
